Do vegetarians eat animal crackers? ~Author Unknown

My group made Orange Basil Biscotti, and in that group was Lucas, Irene and myself. I was very impressed with our food lab and how we worked together as well as how our final product turned out.

I liked/ didn’t like… at home I could alter this food product by….
I liked how I was able to make something that I have never made before. I had heard of biscotti but never actually made it or tasted it so I was thankful for the opportunity to make something new. New components came with making it as well because I have never zested anything before and never used a zester, so that was something new and fun to try. I also enjoyed the stages in which we made the biscotti. I have never really cooked anything two times before serving which was interesting to me and thought that that was very interesting how something required that to get the full cook time and really make it taste great.

 I didn’t like how sticky the dough was and how hard it was to clean but there was not much we could change about that. That is how the dough turned out. At home, I could alter this food product by adding less orange zest because I thought it had a little too much and I could also decrease the time. I would be able to cook it and cool it and cook it again all in one day and would not need to refrigerate it. The time could be significantly decreased and I could make it within around an hour and a half instead of 2 full classes.

What connections can you make between this lab and what we learned in class?
In class we learned that you can only use garnish on your disk if that herb is actually in your dish. When plating the dish I wouldn’t have known that unless I had asked earlier in class. Also, I never really knew all the different cuts with a knife which helped a lot when slicing the herbs and cutting the orange for juicing it and plating it. Also, because we were cutting many things, the wet cloth underneath the cutting board was very helpful so it did not slide around.

Erich I loved the taste of your cookies and I had never tasted anything with lavender in it before. Your cookies tasted very good and your plating was very nice and creative. Also, good for you for creaming sugar into butter for your first time. I’m glad you enjoyed it and got an inspiring experience out of it. I also liked how you used cookie cutters to get shapes which made your plate more presentable. I’m glad you got to use an unusual herb that is uncommon and not always used in many dishes but I’m glad you did because it made your cookies that more enjoyable.
